Bolzano Artisan Meats is the first company in Wisconsin to bring back the lost art of dry curing, and one of the few nation to make it's product from locally raised heirloom hogs. Our tours are so full of education, we’re calling them Charcuterie School! It’s a tour of Bolzano Artisan Meats’ facility in the Riverwest neighborhood of Milwaukee, complete with generous tasting flights of all of our products. Be prepared to eat, learn, and really geek out with us on what makes Wisconsin’s first prosciutto company tick, what the heck dry-curing is, and why it’s great for heirloom breeds and small farms.
