Fresh or fried, Wisconsin cheese curds are a favorite for residents and visitors alike. This quintessentially Wisconsin food staple is so popular, in fact, that some restaurants are finding ways to incorporate them into unique menu items.
More than 100 years ago, the Chicago-based Libby, McNeill & Libby pickling company expanded its plants around the Midwest, including one built in Marshfield in 1905. Libby McNeill’s, located in Hotel Marshfield, continues to give a nod to the city’s famous pickling plant history with its modern, comfort food cuisine.
The menu also features a variety of cheese curd dishes, including a delicious seasonal house-made meatloaf, stuffed with cheese curds and applewood-smoked bacon, and topped with a steakhouse gravy.
Family-owned Wild Tomato serves up delicious, made-to-order wood-fired pizzas using sustainable products and the best ingredients available. Diners can create their own classic-style pie or choose from one of Wild Tomato’s specialty pizzas, including the “Donation Creation,” where $1 from the sale of each pie is donated to local non-profits.
But it’s the Green and Gold specialty pizza that keeps cheese curd-lovers coming back for more. The pizza features roasted chicken, bacon, grilled broccoli, spinach and of course, real Wisconsin cheese curds.

Made with French fries and topped with gravy and cheese curds, it’s obvious why Wisconsin has taken the dish under its wing with unique adaptations. Today, many of Wisconsin’s pub-style restaurants feature a variation that’s a perfect starter to share with friends.
At Goodkind in Milwaukee, the poutine has been transformed into a full-on meal. Those on the hunt for an extra-cheesy option need look no further than the Chicken Bacon Cheese Curd Fusion Burger. This loaded burger is made with ground chicken and bacon and topped with Wisconsin white cheddar cheese curds, mozzarella cheese, ranch dressing and dill pickles on a potato bun.
