Since March 1985, Roussous has been serving Madisonians real New Orleans food at his restaurant, New Orleans Take-Out. All of the cooking is from scratch, made with fresh ingredients. The bread for the po' boy sandwiches comes daily from a local bakery. Roussos changes the menu periodically, dropping items and adding new ones.
